
Jack Schnable, a senior who will graduate this spring from the Milwaukee Institute of Art & Design, got together with Baron Gottsacker a chef to write a cookbook for Crohn's disease. It was a senior year project for Schnable and not for sale but I found the story fascinating.
Dishes include garlic chicken wings, baked plantains and something called Sincronizadas Quesadillas. These quesadillas are baked, not fried, and they're filled with a sauté of onions, cilantro and garlic, smoked turkey and goat's cheese, whose proteins, Schnable said, are easier to digest.

"Adapt: Simple & Inspiring Crohn's Friendly Cuisine" also includes helpful information: lists of foods that are common aggravators of Crohn's and cooking methods and foods that are easier on the digestive tract, as well as a section explaining just what Crohn's disease is.
That's the trick. Isn't it? Just figuring out which foods make your condition worse and which one you can tolerate. BTW, a while ago I posted an article by a friend that lists some of the more common foods that cause problems for IBD patients.
