We're pretty lucky to have Laurel Garwin, a certified nutritionist, regularly attending meetings of the IBD support group I'm in (Palo Alto, CA). Recently she offered to let me post a paper she wrote on UC and Nutrition and so here it is. It's not published anywhere else so I guess that makes it an IBDanswers exclusive! She wrote the paper as the thesis for her Nutrition Consultant certification from Bauman College and it took her about 3 months to write and research. Although Laurel does not have IBD her stepmom does so it's a topic that's near and dear to her heart. In her own words: "I wanted to write it so that normal people could understand the current theories and what was going on (not that anyone really knows yet). I also wanted to give some practical advice or recommendations, and explanations as to why, so that anyone could implement without spending a fortune or doing a lot of expensive testing."
